More than Maple Syrup
Buckhorn Sugarbush was born in Wisconsin upon moving to northern Wisconsin in 2009. Starting with all home made taps and cooking over an open fire, the first year of syrup left a bit to be desired. Over the years, however more equipment has been added, increasing the sugarbush to what it is today at 1800 taps. Buckhorn Sugarbush grew again in 2016 when we added the custom reclaimed home décor and furniture upon moving to Sundance, Wyoming.
Now, the spring is dedicated to making syrup in Wisconsin and the rest of the year is spent in Wyoming either designing and building or traveling to shows and farmers markets throughout the Rocky Mountains: Colorado, Montana, South Dakota, and Wyoming. It started as a hobby and is the most expensive hobby I've ever had. I have somewhere between 3,000 to 4,000 maple trees on my land. In 2015 we installed a pipeline to tap approximately 1800 and tap more every year. I built my first three sap cookers, however in 2016 I purchased a Leader Evaporator with a capacity of evaporating 300 gallons per hour. This evaporator was put into service in February 2017 after building a new shack.
Recently, I moved to Sundance, Wyoming where I sell my syrup and other items at farmer's markets and stores, returning every spring to Wisconsin for syrup season.
Maple syrup scores a 54 on the glycemic index which is lower than many sweeteners and can be used as an alternative to sugar which can improve digestion. It includes important vitamins and minerals that can help fight illness and help with metabolism. Maple syrup is filled with antioxidants. Some of the antioxidants can help protect cells against cancer and are beneficial for reducing free radical damage that can cause inflammation and contribute to the formation of various chronic diseases.
